Specialty Jams
Bringing local and vintage flavors to NWA
using a fraction of the sugar used in traditional recipes

AGATHA'S TABLE
Locally Sourced Fruits and Ingredients
The fruits are sourced directly from local farmers whenever possible and processed when the fruit is at its peak of ripeness. Those include strawberries from McGarrah Farms in Lowell, blackberries and blueberries from Neal Family Farm in Rogers, and peaches and "Arkansas Black" apples from Vanzants Fruit Farms in Lowell. I also get my cocoa powder from KYYA, the bean to bar chocolate company in Bentonville.
Low Sugar
All of my jams are low sugar, meaning they use a much smaller amount of sugar than normal. Traditional recipes would normally call for 4 to 7 cups of sugar for 4 cups of fruit, where I use 2 cups of sugar for that amount. I use a special low-sugar pectin that is made from citrus peels and is totally natural.
Native Fruits
Whenever I can get my hands on native fruits from the local area, I make jam from them because no one else is doing that and I love to introduce people to vintage tastes from NWA. Due to my age, I am not able to forage anymore, so my offerings these days are less than what they used to be. At this time, I offer locally grown Pawpaw Jam, Maypops Jam and "Arkansas Black" Apple Butter. If you can find these flavors for sale from anyone else in the country, please let me know.
Original Flavors
Many of my flavors are original combinations. If anything sounds like it has liquor in it, it does not (by Arkansas state law). I use an extract to get the same flavor.
